Chicken Mole

Preheat oven to 350
Grind cumin, fennel seed, coriander, chilis and 1/2 of the cinnamon in a mortar. Coat chicken well.
Bake chicken on parchment lined baking sheet for 30 minutes. Remove from oven and cool.
In a large sautee pan, sautee onions in olive oil at medium heat until just golden. Add jalapenos and sautee 3 minutes. Add garlic and sautee 2 minutes.
Add chili powder and cocoa and sautee one minute. Add tomatoes. Sautee 5 minutes. Add chicken broth and black beans. Add habanero sauce and sugar. Chop cooked chicken breast and add that.
Cook over low heat for 45 minutes. When nicely reduced, serve over brown rice with sour cream and freshly chopped cilantro.

This is a rich, dark stew redolent of chocolate, coffee and chiles....

- 2 chicken breasts
- 2 TBSP cumin
- 1 1/2 TBSP fennel seed
- 1/2 tsp coriander
- 1 tsp dried chiles
- 1/2 tsp cinnamon
- 1 TBSP chili powder
- 1 TBSP cocoa powder (raw, unsweetened))
- 1/2 cup cold coffee
- 1 cup chicken broth
- 1 can black beans
- sour cream
- large bunch fresh cilantro, roughly chopped
- 3 cloves garlic, minced
- 1/2 onion finely, sliced
- 1 jalapeno pepper, minced
- 1/2 tsp habanero sauce
- 1 tsp sugar
- 1 TBSP olive oil
- 3 fresh tomatoes, roughly chopped
- 3 cups cooked brown rice
