Chicken Mole

Directions

Preheat oven to 350

 Grind cumin, fennel seed, coriander, chilis and 1/2 of the cinnamon in a mortar. Coat chicken well. 

 Bake chicken on parchment lined baking sheet for 30 minutes. Remove from oven and cool.

In a large sautee pan, sautee onions in olive oil at medium heat until just golden. Add jalapenos and sautee 3 minutes. Add garlic and sautee 2 minutes. 

Add chili powder and cocoa and sautee one minute. Add tomatoes. Sautee 5 minutes. Add chicken broth and black beans. Add habanero sauce and sugar. Chop cooked chicken breast and add that.

Cook over low heat for 45 minutes. When nicely reduced, serve over brown rice with sour cream and freshly chopped cilantro.

This is a rich, dark stew redolent of chocolate, coffee and chiles....

Ingredients
  1. 2 chicken breasts
  2. 2 TBSP cumin
  3. 1 1/2 TBSP fennel seed
  4. 1/2 tsp coriander
  5. 1 tsp dried chiles
  6. 1/2 tsp cinnamon
  7. 1 TBSP chili powder
  8. 1 TBSP cocoa powder (raw, unsweetened))
  9. 1/2 cup cold coffee
  10. 1 cup chicken broth
  11. 1 can black beans
  12. sour cream
  13. large bunch fresh cilantro, roughly chopped
  14. 3 cloves garlic, minced
  15. 1/2 onion finely, sliced
  16. 1 jalapeno pepper, minced
  17. 1/2 tsp habanero sauce
  18. 1 tsp sugar
  19. 1 TBSP olive oil
  20. 3 fresh tomatoes, roughly chopped
  21. 3 cups cooked brown rice
